The term JAMÓN SERRANO is currently protected by Regulation 509/2006 on the traditional specialities guaranteed for foodstuffs.

Products marketed with this mention must be certified by an accredited entity that verifies compliance with the Specifications for the production of this Traditional Speciality Guaranteed.

For the granting and maintenance of the certificate, AENOR carries out periodic controls that include audit and testing tasks, to verify that the manufacturer's self-control system guarantees the application requirements relating to the characteristics of raw materials, specific conditions of the different phases of product production, physical-chemical and organoleptic characteristics of the final product, as well as the curing times established by the Standard.

Our experience

AENOR currently has the regulatory recognitions issued by the competent Authorities to be able to operate as an authorised control entity for the certification of agri-food products with scope for JAMÓN SERRANO. AENOR is also accredited by ENAC, the National Accreditation Entity, in accordance with the UNE EN ISO 17065 standard for this scope.

Granting of marks and certificates

Companies certified by AENOR obtain recognition from the Administration to be able to use the protected mention. Likewise, in the event that the company has a Quality Management System in accordance with the requirements of the ISO standard 9000 certified by AENOR, they may have the license to use the AENOR mark for Serrano Ham.
