After extraction a stock solution of the milk fat is prepared. From that stock solution the triglycerides (separated by total carbon numbers) are determined by gas chromatography using a packed or a short capillary column. By inserting the weight percentage of the fat molecules of different size (C24 - C54, using the even C numbers only) in a triglyceride formula, the foreign fats are either qualitatively detected or quantitatively determined.
