Resumen:
This standard specifies hygiene requirements for planning, construction and handling of shop equipment for storage and preparation of blanks/dough pieces (e. g. thawing) and the process of baking. Furthermore, the standard specifies requirements for the offering of ready to eat, not need to be cooled bakery products in self service in order to offer hygienically acceptable bakery products to the consumer.
